Vegan Chocolate Cupcakes

No butter & no milk!

Makes 12 cupcakes


Ingredients:

- 4 eggs

- 120 g dark chocolate

- 230 g flour

- 150 g sugar

- 2 1/2 tsp baking powder

- 1 pinch of salt

- (optional) heavy whipping cream






Directions:

  1. Prep a tray of 12 cupcake molds with cupcake liners and set the oven to 350F

  2. Chop the dark chocolate and melt it bain-marie style, or in the microwave and keep on the side

  3. In a stand mixer bowl, beat the whole eggs with the sugar at the maximum speed

  4. Once the eggs have become light and foamy, add the flour and baking powder through a sieve and continue to beat the batter at a slower speed

  5. Finally, add the melted dark chocolate to the batter with a pinch of salt and beat with the mixer

  6. Once the chocolate looks well-incorporated, take a spatula and fold the batter in down to up motions to make sure the batter is homogenous

  7. Use a spoon to add the batter to the cupcake molds until all are filled equally

  8. Bake for 15 - 20 minutes and let cool

  9. (Optional step) whip some heavy whipping cream to decorate your cupcakes
