Red, white, and blue pinwheel cookies are the perfect treat for the 4th of July, but simply change the colors to match any theme, event, or holiday!
Recipe
Makes 25-30 cookies
Ingredients
- 1/2 cup (1 stick) softened butter
- 2/3 cup sugar
- 1/4 tsp salt
- 2 eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- red food coloring
- blue food coloring
Directions
1. Using an electric mixer, cream the butter and sugar with a paddle attachment until light and fluffy
3. Add eggs, vanilla, and salt and beat until well combined, for about 2 minutes
4. Gradually add flour, mixing until smooth
5. Divide the dough into three equal pieces
6. Place one piece back into the mixing bowl and add red food coloring (add until you reach the color of your liking)
7. Mix until the color is uniform throughout the dough
8. Repeat using another piece of dough adding blue food coloring
9. Once you have three pieces of dough in red, white, and blue, flatten each piece and wrap them individually in plastic wrap to be refrigerated from 2 hours to 1 day.
10. Remove one piece of dough and place between 2 sheets of parchment paper and roll the dough out into a 9"x12" rectangle. Repeat this process for the other 2 pieces of dough and refrigerate the dough between sheets of paper for 30 more minutes
11. Preheat oven at 350F and line 2 baking sheets with parchment paper
12. Once chilled, peel the top layer of parchment paper off each piece of dough
13. Flip the plain dough on top of the red dough, remove the parchment paper. Flip the blue dough on top of the plain dough, and remove the remaining parchment paper
14. Roll the dough lengthwise tightly, making sure now spaces form between the rolls
15. Keeping the seam at the bottom, use a sharp knife to slice the log into 1/4" cookies. Place each cookie onto prepared baking sheet
You can sprinkle your cookies with colored crystallized sugar for added texture.
16. Bake for 10-12 minutes or until the edges turn golden
Cool for 10 minutes before serving!
