Italian Zucchini

Don't have time to make an elaborate side dish?

>This is a perfect and healthy vegetable complement to any meal.


Ingredients:

- 2 tbsp of sunflower oil

- Half a white onion, chopped

- 2 cloves of garlic

- 4 large zucchini cut into rounds

- Kosher salt

- Freshly ground black pepper

- Pinch of crushed red pepper flakes

- 2 tbsp of white wine (Pinot Grigio or

Sauvignon Blanc)

- 1 tsp of fresh rosemary or oregano


Directions

1. In a large skillet, heat oil over medium heat

2. Add onion, garlic, and cook until golden

3. Add zucchini, sprinkle the white wine, add the red pepper flakes, and sauté for about 4 minutes

4. Reduce heat to low and cook for 10 more minutes

5. Season with salt and pepper

6. Serve with some minced rosemary or oregano
