Carciofi alla Romana

Carciofi alla Romana, or "Roman-style artichokes," are a typical Italian side dish of Roman cuisine.


Ingredients

- 4 artichokes

- a small bowl of fresh mint

- 250 ml. of water with the juice of 1 lemon

- 1 clove of garlic

- half glass of extra virgin olive oil


Directions

1. Prepare your artichokes by peeling off the outer and thicker leaves and cutting both the tips and part of the stem

2. Carefully pry open the artichoke in order to spoon out most of the hairy-looking filaments

3. When the artichokes are ready, put them in a bowl with water and lemon juice, so that they don’t darken and can keep their bright colors

4. Mince the washed fresh mint leaves and garlic together

5. Once the artichokes have been sitting in the lemon water for at least 30 minutes, remove them from the bowl and start stuffing each artichoke with the mint and garlic filling

6. Take a saucepan with high edges and place the artichokes in the pan, stem side up

8. Pour the lemon water in the pan together with half a glass of extra virgin olive oil

9. Cover the pan with a lid and cook the artichokes for about 30 minutes until they are tender


Serve hot and buon appetito!
